Wine-growing

At Celler Pasanau, our viticulture is a declaration of love for the land. From our vineyards in the prestigious DOQ Priorat, we work with dedication to honor the winemaking tradition we have inherited, combining the teachings of our ancestors with innovative practices that promote sustainability and regeneration of the land. Our commitment to organic and regenerative agriculture is a fundamental part of our identity, allowing us to create wines that capture the essence of Priorat while caring for and enhancing our natural environment.
Ecological Agriculture: Caring for the Earth for the Future
Our way of cultivating the vine goes beyond simple respect for the environment; it is based on the active regeneration of the land and the surrounding ecosystem. At Celler Pasanau, we practice regenerative agriculture, a philosophy that seeks to return to the earth more than is taken, creating a more resilient and healthy vineyard in the long term.

We work the soil with techniques that encourage microbial life and improve its structure. We also maintain permanent plant cover in the vineyards, which helps prevent erosion, improves biodiversity and provides a habitat for beneficial insects. These practices not only enrich the soil, but also increase its capacity to retain water, which is essential in Priorat's Mediterranean climate.
The Commitment to a living terroir
At Celler Pasanau, we believe that a healthy vineyard is a living vineyard, full of biodiversity and in balance with its environment. Each of our viticulture practices, from pruning to harvest, is designed to work in harmony with nature and promote a thriving ecosystem. Our goal is not only to produce exceptional wines that reflect the unique character of the Priorat, but also to care for and improve the natural legacy we have received so that it can be enjoyed by future generations.

Every bottle of wine we make is a reflection of this dedication to the land and to quality, a tribute to the rich winemaking tradition of the Priorat and a testament to our commitment to sustainability and regeneration.
VINEYARDS
The variety of our soils, the different orientations of our estates and the diversity of microclimates they enjoy, together with the viticultural varieties we treat, provide our areas with a unique richness in the Priorat.
LES
MYRIAMS

It was on this estate, in 1995, that we had the pride of planting the first Viognier of the DOQ Priorat.

This farm is located in La Morera de Montsant, at 735 meters above sea level within the limits of the Serra de Montsant Natural Park. It has a planted vineyard surface of 0.66 Has surrounded by pine forest and Mediterranean bushes, oriented to the South-East.

Mediterranean climate with a continental touch, with great temperature contrast between day and night and subject to currents coming from the sea. Very little rainfall as is usual in the area.

The production system is vineyard in trellis on an almost flat plot.

The Cenozoic soils, with a high concentration of calcium carbonate and clays, give structure and minerality to the Viognier grapes.

LOS
TORRENTS

The site of Los Torrents, located on both sides of the Barranc dels Torrents at 540 meters above sea level, represents the beginnings of viticulture in the Pasanau Family.

Currently, there are mostly vineyards of Carignan and Garnacha noir distributed partially on terraces and on the coast. Carignan facing the west and Garnacha facing the east as our ancestors told us.

The high temperatures in the summer during the day contrast with a great drop in temperatures at night, as corresponds to high-altitude farms. The heat that the licorella absorbs during the day and the currents that are generated at sunset turn the coasts of Los Torrents into a living spectacle of moving leaves.

An area of 3.30 Hectares planted with vines between 1940 and 2020 and surrounded by forests of pines, oaks, shrubs and Mediterranean plants such as horsetail, fennel, thyme and rosemary.

From its grapes we obtain the Paratge de los Torrents Wine. A unique, fruity, spicy wine that gives perfect testimony to the terroir from which it comes.

LA PLANETA ESTATE

Close to La Morera de Montsant, at 740 meters above sea level, we find Finca La Planeta, with an area of 2.3 Hectares. It is a real privilege to enjoy the view of the Priorat from this property, probably the highest and most northerly planted in the DOQ Priorat; a feeling of majesty and at the same time protection by the Serralada del Montsant.

Rows of vines lined up shoulder to shoulder from north to south in possibly one of the airiest areas of the Priorat and with a huge temperature contrast between day and night.

Soils of calcareous gravel and conglomerated marl are the support of a Cabernet Sauvignon vineyard planted in 1984.

Pasanau Finca La Planeta is our most emblematic wine, which has enjoyed numerous accolades throughout its history; from the 1997 vintage that was ranked 58th in the world according to Wine Spectator to the most recent vintage presented in 2020 with 96 points and a gold medal by Decanter.

EL COSTER
DEL MASET

Slate hillside of 0.8 hectares of old Carinyena vineyards, at 560 meters of altitude.

This is the plot that best reflects the heroic task of growing vines in a land like the Priorat. A steep coast of licorelles that slide down the slope, between Carignan vines over 60 years old.

A very low production that does not even reach 1000 kgs/Ha and the hardness of its cultivation is more than compensated by the quality of the wine that is obtained concentrated in a bottle of Vell Coster.
